I’m sorry I haven’t been posting lately I have been really busy and haven’t had the time between homework and projects and presentations. Do you need a quick but healthy snack? Well then you’ll love Energy Bites! But do they actually give you energy? Yes they do! And kids love them. This is one healthy thing you’ll get kids to eat.
In a food processor, process dates until they form a ball. Add almond meal, cocoa, and chia and process until well blended. The mix should feel kind of moist or sticky.
Remove mix from food processor and pinch enough to make a 1-inch ball. Squeeze mixture and roll in your hands until a ball is formed. Repeat! It should make 20-24 balls.
NOTE: If you can’t find almond meal, you can make it! Just put almonds in a food processor and process until they turn into a coarse meal. Food Processor should only be used by adults! If you’re a kid, have adult supervision.
During the winter break I went to South Carolina to a coastal island named Daufuskie. I stayed in a real lighthouse, it snowed, I rode horses, and I learned about the Marsh Tackys (a really cool type of horse). It snowed in South Carolina a long time ago so it was exiting to see real snow. The lighthouse we stayed in was a really old one. It was so old it had a butter churn! And it still worked!
At the barn where we rode horses there where 3 cats and 1 lab. And of course horses. I rode one named Fawn and my brother rode one named Gator. The Marsh Tackys are horses that have short legs that can walk on ice and mud without slipping. They were taken away from the island and they recently brought them back. When we came to the island they had just had two baby horses but we only met the little girl horse. SHE WAS SO CUTE!
I also saw indigo being made. Indigo is a plant that you pick the leaves when it’s flowering and you crush them to make tiny little chunks of a dark green. Then put in hot water and add some other materials, like lime, and mix it, then wait. Then put a piece of cloth or silk into the dye and it will be blue!
As you can see, I had a amazing time at Daufuskie island.

It was the night before Christmas and Germio was busy wrapping gifts for his family when a loud noise scared him. “clunk clunk clunk”. Germio looked out his cage bars and saw big black boots. Then he looked up a little higher and he saw a red suit with white fur trimmed on the end of the sleeves. IT WAS SANTA! Germio could not believe his eyes he squeaked with delight. Then Santa looked down at Germio and squeezed a tiny box through the cages bars and winked, it was what Germio always wanted a mini teddy bear just for him. Then Santa hopped up the to the roof and flew away with his sleigh and Germio could swear he could hear a faint “Merry Christmas”.

Pom-pom is my 2 year old hamster.I got him as a baby and he always likes to play!
Every morning I find him sleeping in his little compartment in his green and purple cage.As soon as I tap gently he wakes up and comes down stairs for a treat. Some people may think that when my cat is near the hamster pom-pom is scared but he is actually friends with my cat! Every time I take pom-pom out she runs to where ever I am and sits next to me and pom-pom and sometimes even purrs. He never needs much attention and only needs a bath once a week. His favorite game is bubble bath and it is what it sounds like. He loves to play in the bubbly water and his 2nd most fun thing to do is get wrapped up in a cozy blanket.
